On a date...

This is a recipe from my mother-in-law's diary which I had copied some four years ago and decided to try it when I had a box of dates lying since a few days. We simply loved it-it is so easy,not a lot of beating and best part, the table top was not as messy as it usually is when I am done with a cake!



Recipe:
Pitted dates-1 cup
Hot Milk-1 cup
Maida-2cups
Refined oil or cream-1 cup (I used oil)
Sugar-1 cup
Eggs-3
Baking soda-1tsp

1. Preheat oven at 200 degree C.
2.Soak the dates for some time in hot boiled milk(I soaked them for 40minutes). Once it is cooled a bit, grind the dates in a mixer to form a paste.
3.Sieve maida and baking soda thrice(thrice as per amma, I did it only once:)
4.In a new bowl, mix oil and sugar.
5.Beats eggs separately and add this to the bowl containing oil and sugar and mix well.
6.Add the dates paste to the above.
7.Now add the maida-soda mix to this slowly, stirring in between.
8.Bake for 30-35mins.
9.Let is cool in the tin for 10min and then let it cool completely out of it.
10. Slice it and serve it with your evening coffee or tea or just have a bite any time of the day!
